Assembly is a Melbourne-based tea and coffee store specialising in unique, single-origin tea and specialty brewing equipment sourced from across the globe. Intrigued by the growing single-origin coffee industry and the lack of a similarly diverse and accessible specialty tea scene in Australia, Chrissie Trabuco founded Assembly in 2013 with a mission to elevate the cultural appreciation and perception of tea to the level that coffee, wine and dining industries experience in Australia.   With a focus on craft, quality and production transparency, Chrissie began working with importers and producers from across Japan, Sri Lanka, Taiwan and China to source single-origin teas – before experimenting with and refining her own unique herbal tisanes.  Today, Assembly is a locally beloved store in Carlton, Melbourne that wholesales tea and house-roasted coffee to cafes and restaurants across Australia – always with a focus on showcasing quality, organic ingredients, balanced herbal blends and unique flavour profiles.

From the harvest and sorting, through roasting and winnowing, to grinding and pouring - every bar of our chocolate takes almost a week to make and it’s all done in our factory in Cremorne. We start with small samples and explore the characteristics of each batch before developing a new variety of chocolate.
