Miellerie Honey

A family owned-and-run farm in Tasmania. Miellerie means "the house of honey" in French. This honey is produced by Yves Ginat, a Frenchman now living in Tasmania. Yves began keeping bees as a young boy in France. He has brought his techniques with him, and says of his honey, "it is a subtle marriage of French tradition and Tasmanian flowers." We use their Leatherwood honey which has a pronounced floral note. The Leatherwood tree grows deep in the rainforest of the world heritage wilderness of South-West Tasmania. The leatherwood tree yields nectar that has a complex flavour, reminiscent of the cold rainforest floor.

Our Process

From the harvest and sorting, through roasting and winnowing, to grinding and pouring - every bar of our chocolate takes almost a week to make and it’s all done in our factory in Cremorne. We start with small samples and explore the characteristics of each batch before developing a new variety of chocolate.
