Honey Walnut

This bar is made using our 70% Dominican Republic chocolate from Zorzal cacao.

We have sourced the honey from Miellerie, a family owned-and-run farm in Tasmania. We chose to feature their Leatherwood honey, which is really aromatic, and adds floral sweetness to our rich 70% dark chocolate. The walnuts are certified organic and come from Wellwood Farm in Wallace Victoria, which gives the bar a nice crunch.

Miellerie Honey

A family owned-and-run farm in Tasmania. Miellerie means "the house of honey" in French. This honey is produced by Yves Ginat, a Frenchman now living in Tasmania. Yves began keeping bees as a young boy in France. He has brought his techniques with him, and says of his honey, "it is a subtle marriage of French tradition and Tasmanian flowers."

Our Process

From the harvest and sorting, through roasting and winnowing, to grinding and pouring - every bar of our chocolate takes almost a week to make and it’s all done in our factory in Cremorne. We start with small samples and explore the characteristics of each batch before developing a new variety of chocolate.
