    Most of our bars are made with just three certified organic ingredients.

    • Cacao Beans

      We source our cacao primarily from Zorzal Cacao, a certified organic farm within a 1,000-acre bird sanctuary in the Dominican Republic.

    • Coconut Sugar

      Our coconut sugar is certified organic and sourced from Thailand.It’s made by collecting sap from the blossom of the coconut palm, then gently heating it to form sugar crystals.This method preserves nutrients and supports small scale farming communities.

    • Cocoa Butter

      Our cocoa butter is certified organic and pressed from cacao beans. It’s the natural fat of the cacao bean. We use it to refine texture and balance flavour.

      Zorzal pays farmers up to 50% above local market rates for cacao, providing economic incentives for sustainable practices. They also offer training in organic and bird-friendly farming techniques, enhancing livelihoods and environmental stewardship.

      As the world’s first Bird Friendly-certified cacao farm, Zorzal’s conservation initiatives have led to a significant increase in Bicknell’s Thrush populations. Their efforts demonstrate how cacao production can align with wildlife preservation.

    A Week in the Making

    From the harvest and sorting, through roasting and winnowing, to grinding and pouring, every bar of our chocolate takes almost a week to make and it’s all done in our factory in Cremorne. We start with small samples and explore the characteristics of each batch before developing a new variety of chocolate.

    Why is Hunted+Gathered different from other chocolate?

    There aren't many people making chocolate from start to finish anymore and this is something we specialise in. From sourcing fine flavoured cacao beans from around the world, to roasting, grinding, and conching in house. Being in control of all processes ensures we can focus on quality and know what has gone into the chocolate and how it has been treated along the way. As we are sourcing such full flavoured and high quality cacao beans, we process them with care and at low temperatures as to not lose the pure characteristics of the beans.
