How we make our chocolate.

We source traceable organic cacao, then make every batch in our Cremorne factory.

Sorting and roasting

We sort the beans by hand and tailor the roast to each origin, bringing out its individual flavour.

Chocolate grinding equipment

Grinding

We remove the shells, then grind the cacao nibs over several days to develop the chocolate’s flavour and smooth texture.

Tempering and wrapping

The chocolate is tempered, poured into moulds and wrapped by hand once set.

Our main cacao supplier, Zorzal.

Zorzal Cacao in the Dominican Republic supplies the cacao for all our bars except Coconut and Tanzania.

At Reserva Zorzal, cacao production supports a bird sanctuary, with 70% of the reserve set aside to remain wild. It connects the chocolate we make in Melbourne with the place its cacao comes from.
