Zorzal Cacao is grown inside a 1,000-acre bird sanctuary in the Dominican Republic. 70% of the land is permanently protected forest. The remaining 30% is used for growing organic cacao in a regenerative agroforestry system that promotes biodiversity and carbon sequestration.
Zorzal pays farmers up to 50% above local market rates for cacao, providing economic incentives for sustainable practices. They also offer training in organic and bird-friendly farming techniques, enhancing livelihoods and environmental stewardship.
As the world’s first Bird Friendly-certified cacao farm, Zorzal’s conservation initiatives have led to a significant increase in Bicknell’s Thrush populations. Their efforts demonstrate how cacao production can align with wildlife preservation.
Process
Certified organic cacao is roasted, ground, refined, tempered and moulded in Melbourne. Control of each stage preserves clarity of flavour and traceability of origin.

There aren't many people making chocolate from start to finish anymore and this is something we specialise in. From sourcing fine flavoured cacao beans from around the world, to roasting, grinding, and conching in house. Being in control of all processes ensures we can focus on quality and know what has gone into the chocolate and how it has been treated along the way. As we are sourcing such full flavoured and high quality cacao beans, we process them with care and at low temperatures as to not lose the pure characteristics of the beans.
